But first, “What is this rite of summer called barbeque?”  And is barbeque a noun or a verb? Cavemen cooked meat over an open fire for thousands of years.  So when did we start calling this method of preparation “barbeque?”  The etymology or history of the word is vague but many feel that it evolved from the indigenous West Indian word “barbacoa,” which identifies a method of slow-cooking meat over hot coals.  There are competing theories such as the French phrase "barbe a queue," meaning "from head to tail."  And others claim that the word was derived from a nineteenth century advertisement that combined the offerings of a whiskey bar, beer hall, pool hall and roast pig – BAR-BEER-CUE-PIG.  However, it is a well known fact that this country’s earliest settlers roasted pigs with frequency.  The pigs were left to wander and grow and were captured at a later date.  It was a relatively easy and abundant source of meat for the colonial settlers.

 

At the end of the colonial period and during the early nineteenth century (approx 1800 – 1860) the tradition of large barbeques developed.  Pigs and hogs provided the southern population of the United States a self-sufficient food supply and plantation owners regularly hosted large barbeques that became festive events.  The slaves were also included in these events and virtually all of the pig was consumed in one manner or another.  The southern farmers began to pen and care for their hogs and as a result the hogs became larger, more tender and tastier. The stringy and tough wild pigs of the colonial period became history and modern pig production began. And more pigs meant more barbeques for the South.

 

During this time period the large barbeque became a feature at church picnics and political rallies.  Politicians realized that a large barbeque was not only popular but a relatively inexpensive way to lobby for votes.  These politicians and their backers would also provide lemonade and some corn whiskey to compliment the roasted pigs.  An interesting fact concerning these large barbeques and the roasted pigs was that they were not “class-specific” and people from all economic and educational classes would gather together to eat, drink and listen to stump speeches.  Even today church and political barbecues are a common tradition in many parts of the South.  And most utilize In-Ground Commercial Outdoor Picnic BBQ Grills.

A convenient 12 x 36 x 3/16 inch utility shelf is bolted on one side of the fire box. The overall size (including shelf) of this massive grill is 51 x 43 inch. The hinged cover holds in smoke and heat to give food that "smoked flavor", and also helps protect the inner parts from the elements. The cover is made of 14 gauge sheet steel. The fire box is an all-welded construction of 3/16 inch thick steel (1/4 inch available) and measures 20 W x 14 D x 8 H inch. A formed ash lip on the front helps prevent coals from falling out and reinforces the fire box. The 280 sq. in. surface is fabricated of 1/2 inch steel bars welded on 1 inch centers. The non-removable grill is adjustable to 4 positions with heavy-duty cool spring handles designed for public use. This grill has a non-toxic, heat and rust-resistant black enamel finish and mounts on a 41 inch long galv. pedestal. These In-Ground Commercial Outdoor Picnic BBQ Grills rotate 360 degrees, has a theft-resistant design, and weighs 76 Ibs. Two pedestal choices: 2 3/8 inch O.D. or 3 1/2 inch O.D. galvanized.
